2 large eggs 2 tsp lemon juice or vinegar 1 cup olive oil Pinch of sea salt

Start by separating the egg whites from the yolks. Keep the egg whites aside and add egg yolks to the bowl.

Add fresh lemon juice into the bowl with egg yolks and whisk well.

Slowly, add oil into the bowl and keep whisking constantly. Once the mayonnaise thickens, pour the oil in a slow and steady stream.

If the oil starts to build up, stop adding oil and whisk properly.

When it gets thick, add enough water to thin it. Add a tsp of water at a time.

Once all the oil has been mixed in, you will get a thick and fluffy mayo.

Season it with sea salt. Add very little water to adjust the consistency.
