Made with vermicelli and flavoured with onions, chillies and curry leaves, the semiya upma is a perfect breakfast for children and adults to enjoy on a busy weekday morning.

½ packet vermicelli, toasted 1 onion, finely chopped 2 green chillies, finely chopped 6-7 curry leaves 1-inch piece ginger, minced 1 teaspoon mustard seeds 1 teaspoon chana dal 1 tablespoon vegetable oil 1 cup water Salt, to taste

Heat the oil in a pan and toast the chana dal, before adding the mustard seeds and curry leaves to splutter.

Add the minced ginger and chillies to cook for a minute before tipping in the chopped onions.

Saute for 3-4 minutes and add the water to bring to a boil.

Season with salt and add in the vermicelli once the water starts bubbling; turn down the heat to low immediately and stir well.

Cover and cook the vermicelli for 10 minutes and serve hot, once the water has been fully absorbed.
