Peanut chutney is a creamy South Indian condiment with roasted peanuts, spices, and a hint of tanginess, perfect for your meals.
1 cup roasted peanuts 2 tablespoons grated coconut 1 small piece of tamarind 2-3 green chillies (adjust to taste) 1 clove garlic (optional) Salt to taste Water as needed
Dry roast raw peanuts until golden brown and aromatic. Let them cool.
Add roasted peanuts, grated coconut, tamarind, green chillies, garlic and salt in a blender.
Add water and blend to a smooth paste. Adjust consistency as desired.
Heat a pan, and add a teaspoon of oil, mustard seeds, urad dal, curry leaves, and dried red chillies.
Pour the tempering over the blended chutney. Mix well.
Peanut chutney is ready! Serve with meals and enjoy.
