Sev Usal is a popular street food from Gujarat, India, known for its spicy and tangy flavours. It is typically served with pav or as a standalone snack.
1 cup dried white peas (vatana) 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds A pinch of asafoetida (hing) 2 onion, 3 tomatoes 2 green chilies
1 piece ginger 3-4 garlic cloves 1/2 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp cumin powder 1 cup sev (crispy gram flour noodles) Coriander leaves
In a pressure cooker, add the peas and 2-3 cups of water. Cook for 3-4 whistles or until the peas are soft but not mushy.
Heat oil in a pan, add mustard seeds, cumin seeds and a pinch of asafoetida. Add the finely chopped onions and cook until they turn golden brown.
Add the grated ginger, minced garlic, and chopped green chilies. Add the chopped tomatoes and cook until they soften.
Add turmeric powder, red chili powder, ground coriander, ground cumin, and salt. Add the cooked white peas to the masala. Simmer for 10-15 minutes.
Ladle the usal into serving bowls. Top generously with sev and garnish with finely chopped onions, tomatoes, and fresh coriander leaves.
