Nothing better than pickling mangoes in the summer, to last the entire year. Here's a quick and simple South Indian style raw mango pickle recipe, for the same.
2 raw mangoes 2 tsp red chilli powder ½ tsp methi seeds, halved 1 tsp mustard seeds, halved ½ tsp turmeric powder ½ tsp asafoetida 2 tbsp toasted sesame oil 1 tsp salt
Destone the raw mangoes and cut them into small cubes.
In a mixing bowl, add all the other ingredients along with the cubed raw mango pieces and mix them well.
Store them in a food-safe, airtight, glass container, and keep them in a refrigerator.
