Given how groundnuts are available in the plenty during the monsoons, steaming fresh pods and converting them into a flavoursome snack is one of the best ways to enjoy them. Mix and match any ingredients of your liking into the sundal and relish with a cup of steaming chai.
1 cup boiled peanuts 1 small onion, chopped 1 tomato, chopped 2 tablespoons chopped coriander Juice of ½ lemon ½ teaspoon chaat masala ½ teaspoon red chilli powder Salt, to taste
Combine the boiled peanuts, onion, tomato and coriander in a bowl.
Combine the remaining ingredients to make a dressing and coat the peanut mixture thoroughly.
Rest for 10-15 minutes for the flavours to fully absorb before serving cold or at room temperature.
