Peanut chutney makes an ideal accompaniment for Diwali snacks, adding a deliciously nutty flavour with a hint of spice and tang. Perfect with crispy Batata Vadas, pakoras, or even dosas, this chutney brings a delightful contrast to the rich flavours of festive treats.
1 cup peanuts 2–3 green chillies 1 small piece of tamarind 1/4 cup grated coconut Salt to taste 1/2 cup water
1 tsp oil 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1–2 dried red chillies 8–10 curry leaves A pinch of asafoetida (hing)
Roast Peanuts, Dry roast the peanuts in a pan on medium heat until they are golden brown.
Let them cool, then remove the skin by rubbing the peanuts between your hands.
In a blender, add the roasted peanuts, green chillies, tamarind, grated coconut (if using), salt, and water. Blend until smooth. Adjust water to achieve your preferred consistency.
Heat oil in a small pan. Add mustard seeds and let them splutter, then add cumin seeds, red chilies, curry leaves, and asafoetida. Sauté briefly until aromatic.
Pour the tempering over the blended chutney and mix well.
