A festive pasta salad for Christmas brunch combines colourful veggies, al dente pasta, and a zesty dressing. Add cherry tomatoes, bell peppers, olives, and feta for a vibrant touch. Toss with fresh herbs and chill for a refreshing, crowd-pleasing holiday side dish.
3 cups cooked pasta (fusilli, penne, or bowtie) 1 cup cherry tomatoes 1 cup cucumber 1/2 cup bell pepper 1/4 cup red onion 1/4 cup black olives 1/4 cup feta cheese
1/4 cup fresh parsley or basil 1/4 cup olive oil 2 tbsp red wine vinegar or lemon juice 1 tbsp Dijon mustard 1 clove garlic, minced 1/2 tsp dried oregano Salt and pepper
Cook pasta according to package instructions. Drain and rinse under cold water to cool.
Chop all vegetables and set aside.
In a small bowl, whisk together olive oil, vinegar or lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.
In a large bowl, mix cooked pasta, vegetables, olives, and feta cheese (if using). Pour the dressing over the salad and toss well to coat.
Refrigerate for at least 30 minutes to let the flavors meld. Garnish with fresh herbs before serving.
