Onion pakoras are a winter favourite, featuring crispy, golden fritters made from spiced gram flour batter and thinly sliced onions. Served hot with chutney or tea, their crunchy texture and bold flavours make them the perfect snack to enjoy on chilly evenings.
2 large onions 1 cup gram flour (besan) 2 tbsp rice flour 2-3 green chillies, finely chopped 1 tsp red chilli powder 1/2 tsp turmeric powder 1/2 tsp ajwain (carom seeds) A pinch of baking soda Salt Water Oil
Place the sliced onions in a mixing bowl. Add salt and let them rest for 5-10 minutes. This releases water from the onions, making the batter lighter.
Add green chillies, red chilli powder, turmeric, ajwain, rice flour, and gram flour to the onions. Toss to coat evenly. Sprinkle a little water if needed to form a thick batter that clings to the onions.
Heat oil in a deep pan over medium heat. Test by dropping a small bit of batter; if it rises to the surface quickly, the oil is ready.
Drop spoonfuls of the batter into the hot oil, ensuring they don’t overcrowd the pan. Fry until golden brown and crispy, turning occasionally.
Remove the pakoras with a slotted spoon and drain on paper towels. Serve hot with mint chutney or tamarind sauce.
