Mooli is in season and it’s the perfect time to make Mooli Paratha, a flavourful North Indian flatbread stuffed with spiced grated radish. Soft on the inside and crisp outside, it's perfect for winter, enjoyed best with yoghurt, pickle, or a splash of ghee.
1 ½ cups whole wheat flour 1 radish (mooli) 1-2 green chillies 1 tsp carom seeds (ajwain) ½ tsp red chilli powder 1 tsp coriander powder Fresh coriander leaves Oil or ghee
In a bowl, mix wheat flour with a pinch of salt and add water gradually to make a soft, smooth dough. Set aside to rest.
Squeeze excess water from the grated radish. Add green chillies, ajwain, red chilli powder, coriander powder, and fresh coriander leaves. Mix well.
Divide the dough into small balls. Roll one ball into a small disc, place some radish filling in the center, and carefully seal the edges.
Gently roll it out into a medium-sized, even paratha.
Heat a tawa and place the paratha on it, cook for a minute, then flip and brush with oil or ghee.
Cook until both sides are golden brown, with crisp spots.
