Quick And Easy Indian Style Crunchy Zucchini Stir Fry For Lunch

This dish is delicious and healthy that combines the flavors of Indian spices with the freshness of zucchini.

Ingredients

2 medium-sized zucchini 1 tablespoon oil 1 tsp cumin seeds 1 tsp mustard seeds 1 small sliced onion 2 cloves of garlic 1 green chili  chopped 1/2 tsp turmeric powder 1/2 tsp red chili powder 1/2 tsp  coriander powder Salt to taste Coriander leaves for garnish

Step 1

Wash the zucchini and trim the ends. Cut them into thin slices. In a pan and Heat oil over medium heat.

Step 2

Now Add the cumin seeds and mustard seeds. Let them sizzle for a few seconds until they start to splutter.

Step 3

Add the sliced onion and saute until they turn translucent and lightly golden.

Step 4

Add the minced garlic and green chili. Saute. Add the turmeric powder, red chili powder, coriander powder, and salt.

Step 5

Mix well to combine the spices with the onion mixture. Now Add the sliced zucchini to the pan and coat it well.

Step 6

Cook the zucchini on medium heat for about 5-7 minutes. Once it’s cooked remove from heat.

Step 7

Garnish with fresh coriander leaves. Serve hot as a side dish with rice or roti.
