1 pound raw, boneless, skinless chicken breasts 2 ribs celery, chopped 1/2 red bell pepper, seeded and chopped 4 to 6 green olives, pitted and minced 1/4 cup chopped red onion
1/2 to 1 apple, cored and chopped 1/3 head iceberg lettuce, sliced and chopped 1/4 cup mayonnaise 2 tbsp lemon juice 1 tsp pepper 1/4 cup almonds, toasted
Cook the chicken breasts until tender and chop into bite-sized pieces.
Toast almonds in a frying pan over medium-high heat, shaking frequently.
Mix mayonnaise, lemon juice, and pepper in a medium bowl. Combine chopped chicken, toasted almonds, and celery in a large bowl.
Add chopped red bell pepper, green olives, red onion, and apple. Toss all ingredients together until evenly coated with the mayonnaise mixture.
Serve the chicken salad on a bed of sliced iceberg lettuce.
