A creamy and rich preparation made with a handful of ingredients, tender squid or calamari cooked in butter makes for a delightfully simple meal when paired with crusty bread. Opt for fresh squid instead of frozen, for maximum flavour impact and deliciousness.
250 grams squid, cleaned 8-10 cloves garlic, chopped 1 teaspoon red chilli flakes 1 tablespoon olive oil 3 tablespoons butter Juice of ½ lemon Salt and pepper, to taste
Slice the squid into thin rings and set aside while you heat some olive oil in a pan.
Gently drop the squid rings into the oil and cook for a minute, before transferring to a plate.
In the same pan, add the butter, chopped garlic and red chilli flakes to sauté until aromatic and lightly browned.
Season the sauce with salt, pepper and lemon juice and mix well to combine before pouring over the cooked squid.
Serve warm with toasted bread and a generous sprinkle of chopped parsley.
