Got day-old bread languishing in your refrigerator? Turn it into a light and healthy bread upma for a delicious breakfast. Here's how to make it.
8 slices white bread 3 tbsp oil and lemon juice 1 tsp mustard seeds and sugar ⅛ tsp hing ½ tsp turmeric and salt 10-15 curry leaves 8-10 cashews 2 green chillies, slit lengthwise 1 onion, diced ¼ cup green peas, diced tomatoes and carrots ½ cup coriander leaves finely chopped
In a heated pan, add the oil and fry the cashews till light brown and set aside. Add the mustard seeds, hing, curry leaves and green chillies, and saute for a while.
When the mustard seeds starts to splutter, add the diced onions and saute for a minute. Add the diced vegetables, turmeric powder, and salt and mix well.
Cut the bread slices and into 1-inch squares and add them to the pan. Mix well with the vegetables and spices and take it off the heat.
Add the lemon juice, roasted cashews and coriander leaves as garnish and serve warm.
