Beetroot jam is a tasty and nutritious spread made by cooking beetroot with sugar, lemon juice, and spices. Its earthy flavor combined with sweetness makes it a delicious topping for toast, pancakes, or as a filling for pastries, offering a healthy twist on traditional jams.
2 medium-sized Beetroots 1 cup sugar 1 tbsp lemon juice 1/2 tsp cinnamon powder 1/4 tsp cardamom powder 1/2 cup water
Wash, peel, and grate the beetroots finely. In a large pan, add the grated beetroot and water. Cook on medium heat until the beetroot softens.
Add the sugar to the pan. Continue cooking on low to medium heat, stirring occasionally to prevent sticking.
As the mixture thickens, add the lemon juice. This helps in preserving the jam and enhances its flavour.
Add the cinnamon and cardamom powders. Continue to cook the jam for another 15-20 minutes.
To test, take a small spoonful of jam, cool it slightly, and see if it holds its shape without being too runny.
Once done, let the jam cool completely. Transfer to a sterilised glass jar and store in the refrigerator.
