Suji or semolina halwa is a rich dessert made for Ashtami in Indian households. Made with suji roasted in ghee with an addition of a lot of dry fruits and nuts, it is usually paired with kale chane and puris.
1 cup suji 1/4 cup ghee 1 cup milk 1/2 cup sugar 1/4 teaspoon cardamom powder A pinch of saffron strands Chopped nuts
Heat some ghee and stir in suji. Roast till golden brown.
Gradually add milk and keep stirring till the mixture is thick and consistent.
Add sugar and let the halwa cook till it dissolves.
Garnish with chopped nuts and saffron and serve warm.
