INGREDIENTS

250 grams halloumi, sliced 1 + 2 tablespoons olive oil 7-8 cherry tomatoes, halved 1 onion, sliced 400 grams romaine lettuce, shredded ¼ cup olives, sliced ½ teaspoon garlic powder Juice of ½ lemon 1 tablespoon vinegar ½ tablespoon honey Salt and pepper, to taste

STEP 1

Heat a tablespoon of olive oil in a grill pan and fry the halloumi on both sides, over a medium-high heat, until browned.

STEP 2

Combine the lemon juice, vinegar, honey, olive oil and garlic powder in a small bowl and the remaining ingredients in another.

STEP 3

Season with salt and pepper before tossing the vegetables thoroughly and drizzling ¾ of the dressing on them.

STEP 4

Place the crisp halloumi slices on top and drizzle what’s leftover in the bowl over the cheese.
