Imagine a Caesar salad nestled inside a warm, toasted tortilla wrap for a protein-rich meal packed with greens and umami flavours from the parmesan cheese.

2 tortillas, toasted 1 cup romaine lettuce, chopped 2 chicken breasts, grilled ¼ cup garlic croutons 2 tablespoons mayonnaise 2 cloves garlic, minced 1 teaspoon Dijon mustard 3 tablespoons parmesan cheese 1 egg yolk 1 teaspoon soy sauce Juice of 1 lemon Salt and pepper, to taste

Combine the mayonnaise, garlic, egg yolk, mustard, cheese, soy sauce and lemon juice in a small bowl.

Season with salt and pepper and set aside while you cut the chicken into cubes.

Combine with the chopped lettuce and drizzle the reserved dressing over.

Use a spatula to evenly coat the greens and protein with the dressing and place a large amount in the centre of your tortilla.

Fold the edges inwards to make a parcel and cut into two halves before eating at room temperature.
