Crispy and fluffy puris dipped in spicy, hot bhajis is one combo that is a comfort food for many. Here’s how you can make it at home.
For Bhaji: 250 gms green garlic, chopped 2 potatoes1/2 tsp cumin seeds 2 green chillies, chopped 1/2 tsp turmeric powder 1 tsp coriander powder
1/2 tsp mango powder to taste salt to taste red chilli powder for garnishing coriander leaves For Puri: 250 gms whole wheat flour 75 gms semolina 30 ml oil Salt Oil (for deep frying)
To prepare bhaji, first heat oil in a pan. Add cumin seeds and wait till they crackle.
Add potatoes and stir-fry till potatoes are soft but not fully cooked. Add all the spices and garlic leaves.
Cover and let it cook for 5-10 minutes. Add water if required, then garnish with coriander leaves.
For puris, mix all the ingredients and work it into hard dough. Knead for a few minutes and rest the dough for 30 minutes.
Divide the dough into equal portions and form into balls. Roll out the balls into circles with a rolling pin.
In a deep skillet heat oil, when the oil is hot drop in a poori and spoon hot oil on it continually until it puffs up.
Then gently turn it upside down and let it fry till golden brown. Serve hot with bhaji.
