Punugulu – A Deep-Fried Savoury Fritter From Andhra Pradesh

Made with leftover idli-dosa batter and spiced with green chillies, onions and mustard seeds, punuglu or punukulu are savoury fritters are the best kind of evening snack to enjoy with a cup of tea.

INGREDIENTS

1 cup idli-dosa batter 2 tablespoons rice flour 2 green chillies, finely chopped 1 onion, finely chopped ¼ teaspoon cumin seeds ¼ teaspoon mustard seeds 1 teaspoon minced ginger Salt, to taste Oil, for deep-frying

METHOD

Combine all the ingredients into the idli-dosa batter and season well.

METHOD

Heat the oil in a kadhai and use a spoon to drop bite-sized morsels of the batter into the hot oil.

Fry on all sides until golden-brown and slightly puffy.
