Amritsari aloo kulcha is a delightful Punjabi delicacy known for its crispy exterior and flavourful potato filling. It is served with chole curry and plain yoghurt dip. Here is how to make it at home:
For The Dough: 2 cups of all-purpose flour ½ cup whole wheat flour ½ tsp baking powder ¼ tsp baking soda 1 tsp sugar ½ tsp salt ½ cup yoghurt 2 tsp oil Water
For The Filing: 3 medium-sized potatoes 1 small onion 2 green chillies ½ tsp cumin powder ½ tsp coriander powder ½ tsp garam masala ½ tsp amchur Salt as per taste Fresh coriander leaves
For Garnishing: Butter Coriander leaves
In a large bowl, mix all-purpose flour, whole wheat flour, baking powder, soda, sugar, and salt.
Add yoghurt, oil, and water. Knead the dough for 5-7 minutes, then cover it and keep it aside.
Take a bowl and combine mashed potatoes, onion and chillies.
Add the spices: cumin, coriander, garam masala, amchur powder, salt and coriander leaves.
Heat the tawa and place the dough to cook until the bubbles start to form, then flip and cook the same.
Once cooked, brush it with butter and garnish it with coriander leaves.
