In winter, you will find all kinds of stuffed parathas being savoured in North India, especially Punjab, Haryana, and Uttar Pradesh. One of the most sought-after is mooli paratha, and here is its recipe.
2 cups atta 2-3 tbsp ghee ½-inch ginger 400 grams grated radish ½ tsp garam masala, cumin 2 chopped green chillies 4 tbsp coriander leaves 1.5 tsp chaat masala Salt to taste ¼ tsp ajwain ½ tsp red chilli powder A pinch of turmeric
Use a deep bowl and toss grated mooli with spices and coriander leaves.
Sprinkle salt and keep it aside for it to release water. You can store the access and add it to the dough.
Take the atta and sprinkle a pinch of salt and ajwain. Knead it into a soft dough and keep it aside.
After 15 minutes, divide the dough into spheres. Roll them and stuff them with the radish mixture.
Roll the parathas into smooth yet thin discs. Roast them on a hot tawa.
Serve hot mooli parathas with sabzi, raita, chutney, and pickles.
