Lauki, or bottle gourd, is an incredible monsoon ingredient for snacks, dishes, and even desserts. Here’s a Punjabi-style recipe of lauki ke kofte that you can enjoy as a hearty lunch of dinner.
1 lauki 1/2 cup besan 1/2 cup water 1 onion 2 tomatoes 1 ginger - 1 4 cloves garlic 1 teaspoon chilli powder 1/4 teaspoon turmeric powder 1 teaspoon coriander powder 1/4 teaspoon garam masala 2 cloves 1 green chilly Salt to taste Oil for frying
Grate the lauki and mix with besan and all the spices.
Take small portions and deep-fry to make koftas, and set them aside.
Make the gravy by cooking chopped onions, bay leaf, cloves, ginger, and garlic.
Add chopped tomatoes, water, and all the spices and mix well.
Add the fried koftas to the gravy and cook till they absorb the flavours.
Garnish with chopped coriander leaves and enjoy.
