Ghiya, lauki, or bottle gourd is an ideal summer vegetable that helps to keep you cool. Here’s a Punjabi-style recipe of ghiya ke kofte that will make you fall in love with the vegetable even if you aren’t used to its taste.
Ghiya pr bottle gourd - 1 Besan - 1/2 cup Oil for frying Water - 1/2 cup Onion - 1 Tomatoes - 2 Ginger - 1 Garlic - 4 cloves Chilli powder - 1 teaspoon Turmeric powder - 1/4 teaspoon Coriander powder - 1 teaspoon Garam masala - 1/4 teaspoon Cloves - 2 Chopped green chilly - 1 Salt to taste
Start by grating ghiya to make the kofta.
Mix grated ghiya with besan, red chilli powder, coriander powder, garam masala, and other spices to make a batter.
Take small balls and deep fry them to make koftas, and set them aside.
Make the gravy by cooking chopped onions, bay leaf, cloves, ginger, and garlic.
Add chopped tomatoes and all the spices and mix well.
Pour some water and let the gravy simmer for several minutes.
Add the fried koftas to the gravy and cook till they absorb the flavours.
Garnish with coriander leaves and enjoy.
