Aloo parathas are a comforting and flavourful stuffed flatbread. Filled with spiced mashed potatoes, these golden parathas are cooked with ghee until crispy and soft. Served with butter, yoghurt, or pickles, they make a hearty and satisfying meal, perfect for breakfast or even brunch.
3 potatoes 2 green chillies, 1 tsp cumin powder 1 tsp coriander powder 1 tsp garam masala
1 tsp amchur (dry mango powder) 2 tbsp fresh coriander 2 cups whole wheat flour Water Salt Oil or ghee
In a large bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a soft dough. Add oil and knead again. Let the dough rest for 15-20 minutes.
In another bowl, mix the mashed potatoes with green chillies, cumin powder, coriander powder, garam masala, amchur, chopped coriander, and salt.
Divide the dough into equal-sized balls. Roll one ball into a small circle. Place a spoonful of potato filling in the center, then fold the edges over the filling. Gently flatten and roll the stuffed ball into a circle.
Heat a tawa. Place the rolled paratha on the tawa and cook until bubbles appear. Flip, and cook the other side, adding oil or ghee to both sides.
Serve hot with yoghurt, butter, or pickles.
