Winter brings cauliflower season, when this versatile vegetable is the freshest. Aloo Gobhi, a beloved North Indian dish, combines cauliflower with potatoes and spices. This hearty, comforting dish captures the season's essence, offering warmth and flavour. Here’s an easy recipe to make it.
1 cauliflower 2 potatoes 2 tbsp mustard oil 1 tsp cumin seeds 1 onion 2 tomatoes 2 green chillies
1 tbsp ginger-garlic paste 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp garam masala Fresh coriander leaves Salt
Cut the cauliflower into medium-sized florets and dice the potatoes into similar-sized pieces.
Heat oil in kadai over medium heat. Add cumin seeds. Add the finely chopped onions and sauté. Add the ginger-garlic paste and green chillies.
Add the chopped tomatoes and cook until they become soft. Add turmeric powder, red chilli powder, and coriander powder.
Cover the pan with a lid and let the vegetables cook on low heat for approximately 15-20 minutes.
Once the vegetables are cooked, add garam masala and stir gently. Garnish with fresh coriander leaves.
