Baisakhi reminds us of Punjabi sweets. Punjabi Panjiri deserves a particular note. A bowl of healthy Panjiri might satisfy your craving for something sweet. Panjiri is also known as dabra. Though winter-specific, it's a healthful treat during Baisakhi. Here's the recipe for Panjiri.

Ghee -1 cup Whole wheat flour – 1 to 1/2 cup Crushed almond, coconut, cashew, raisin, pistachio, walnuts and flaxseeds - 4 cups Gond crush – 1 tbsp Dhuli muesli -1/2tsp Poppyseeds – 2 tbsp Kamarkas – 1/2 tsp Jaggery powder – 1 cup
Dry roast the makhana in a pan. Once they cool down, ground them into a powder or keep them whole, set aside
Roast the whole wheat flour (atta) in ghee in a frying pan. Roast it till the raw taste disappears.
Mix the roasted wheat flour with the crushed gond crystals. Continue cooking for another 2 minutes.
Toss in the roasted makhana, poppy seeds or khas-khas, Flame of the Forest or kamarkas, and muesli and continue dry roasting all the ingredients.
Bring the gas to a simmer and mix the jaggery powder with the dried fruits. Shut off the gas and wait for it to cool.
