Punjabi chole is a wholesome dish made with a bunch of flavourful ingredients that goes well with poori as well rice. Here is an easy recipe to prepare Punjabi chole at home.
1 cup soaked chickpeas, 3 tomatoes, salt to taste, a pinch of soda bicarbonate, 3 tbsp ghee, 2 tbsp cumin seeds, 2 tsp ginger-garlic paste, 1 tbsp dried mango powder, dried pomegranate seeds, 1 tbsp red chilli powder, 1 tbsp garam masala powder, 2 tbsp coriander powder, 2-3 bay leaves, ½ tsp asafoetida, 1 tbsp chole masala, 1/2 ginger piece cut into juliennes
Pressure cook chickpeas with five cups water, salt and soda bicarbonate for six whistles. Heat one tbsp ghee in a non-stick pan.
Add tomatoes and cook for 6-8 minutes. Add pomegranate seeds and cook for 2-3 minutes. Allow to cool and grind to a fine paste.
Heat the remaining ghee in a non-stick pan. Add cumin seeds, tomato puree and sauté for 4-5 minutes. Add ginger-garlic paste and cook for 2-3 minutes.
Add all masala powders, bay leaves and asafoetida. Cook for 4-5 minutes more. Serve hot garnished with ginger juliennes.
If you are looking for that brown/dark colour, ensure you put two tea bags while cooking/boiling the chickpeas in cooker. Add the end of cooking add kasuri methi to enhance the flavour of your dish.
