Pumpkin pasties, a delightful and autumnal pastry treat, are a perfect addition to any seasonal gathering. These golden parcels of flaky dough conceal a warmly spiced pumpkin filling that captures the essence of autumn in each bite.
2 cups all-purpose flour ½ tsp salt 1 cup cold butter, diced ¼ cup ice-cold water 1 cup canned pumpkin puree ¼ cup brown sugar 1 tsp ground cinnamon ½ tsp ground nutmeg ¼ tsp ground cloves ¼ tsp ground ginger 1 egg, beaten (for egg wash) Sugar for sprinkling (optional)
In a bowl, mix the flour and salt. Add the cold, diced butter and blend until the mixture resembles coarse crumbs.
Gradually add ice-cold water, stirring until the dough comes together and refrigerate for 30 minutes.
In a separate bowl, combine the pumpkin puree, brown sugar, and spices. Mix well.
On a floured surface, roll out the dough to about 1/8-inch thickness. Cut the dough into circles.
Place a spoonful of the pumpkin filling in the centre of each circle. Fold the dough over the filling to create a half-moon shape and seal the edges.
Brush the tops of the pasties with beaten eggs. This will give them a golden, shiny finish. Place the pasties on the prepared baking tray.
Sprinkle with sugar and then bake in the preheated oven for 20-25 minutes, or until the pastries turn golden brown.
