Pumpkin pachadi is a popular condiment recipe in Kerala. It is a perfect addition to your fall spread and accompanies South Indian snacks impeccably. Here is its quick recipe.
300 grams of pumpkin 2 tsp jaggery ½ tsp turmeric powder 1 green chilli ½ tsp mustard seeds Salt to taste 1-inch ginger ½ cup fresh coconut 7-8 curry leaves 1 tsp oil ½ tsp urad dal
Wash the pumpkin thoroughly and cook it in the pressure cooker with water, salt to taste, and turmeric powder.
After one whistle, turn off the gas. Immediately release by running the cooker under tap water and let the pumpkin cool off.
Grind the pumpkin with jaggery, salt to taste, coconut, ginger, chillies, and curry leaves.
Pour this mixture into another container and keep it aside.
Prepare tempering of oil, urad dal, mustard seeds, and curry leaves. Add it on top of the pachadi.
Serve pumpkin pachadi with South Indian snacks like fried idli, appam, and more.
