This one-pot side dish made with pumpkin and a variety of flavourful ingredients is perfect to pair with hot steamed rice for lunch. Here is the recipe to make flavourful pumpkin curry for lunch.
250 g pumpkin, 4 tbsp fresh coconut, ½ tsp mustard seeds, 4 cloves garlic, 2 tbsp oil, 7-8 curry leaves, 1 onion, salt to taste, ¼ tsp turmeric powder, 4 green chilli, 1 cup coconut milk, 1 tsp red chilli powder, 1 tbsp fresh coriander leaves
Grind the coconut, mustard seeds and garlic to a fine paste. Heat the oil in a pressure cooker; add the curry leaves, onion and sauté till pink.
Add the pumpkin, salt and turmeric powder and sauté for 2-3 minutes. Add chillies and coconut milk and bring to a boil. Pressure cook on medium heat till one whistle.
Remove the lid when the pressure has reduced completely. Add the ground paste and chilli powder and mix well.
Simmer for 3-4 minutes. Garnish with coriander leaves and serve hot with steamed rice.
