A decadent and easy recipe to make chewy pumpkin and chocolate flavoured cookies, these freshly baked confections are the ultimate sweets to bite into, with coffee.

1 + ¾ cup all-purpose flour ¼ cup cocoa powder ½ cup soft butter 1 teaspoon cinnamon powder 1 teaspoon dry ginger powder ½ cup brown sugar ½ cup granulated sugar 2 egg yolks ½ cup cooked pumpkin puree 1 teaspoon vanilla extract 1 pinch salt ¼ cup chocolate chips

Combine the flour, cinnamon, ginger, cocoa powder and salt in a bowl and set aside.

In a separate bowl, add the butter and sugars to blend with an electric whisk.

Follow it up with the vanilla, egg yolks, pumpkin puree, before adding in the dry mixture and whisking until it becomes a soft dough.

Add the chocolate chips and use a spatula to mix it in gently.

Transfer the mixture on to a sheet of parchment paper and flatten with another sheet on top, using your hands.

Allow the dough to set in the freezer for an hour before cutting out shapes of your choice.

Bake the cookies in an oven at 160 degrees Celsius for 20-25 minutes before letting it cool on a wire rack. Serve with coffee.
