Pulled Fanas Tacos To Celebrate The End Of Jackfruit Season

Make this meatless replacement for pulled pork using delicious raw jackfruit in an innovative way to assemble these delicious tacos filled with pulled jackfruit doused in a sweet-spicy sauce.

INGREDIENTS [FOR JACKFRUIT]

1.5 cups raw jackfruit, cubed 1 small onion, sliced 7-8 garlic cloves, minced 1 teaspoon oregano 1 teaspoon red chilli powder 1 teaspoon cumin powder 1 teaspoon garlic powder Juice of 1 lemon 2 tablespoons vegetable oil ½ cup water

INGREDIENTS [FOR SAUCE]

½ cup tomato puree 1 teaspoon onion powder 1 teaspoon garlic powder 2 tablespoons apple cider vinegar 1 tablespoon soy sauce 1.5 tablespoons raw sugar 1 teaspoon Dijon mustard 2 teaspoons red chilli flakes ½ teaspoon black pepper powder Salt, to taste

METHOD

Add all the ingredients for the sauce into a saucepan and bring to a boil.

Simmer for 4-5 minutes and turn off the heat and allow it to cool completely.

Meanwhile, heat the oil in a pressure cooker and sauté the onions and garlic until fragrant and browned.

METHOD

Add the cubed jackfruit followed by the spices and season with salt.

METHOD

Toss everything together and let it sauté for 3-4 minutes before you add the water and pressure cook for 2 whistles on a medium flame.

Using two forks, shred the cooked jackfruit into thin strips and add a couple of generous tablespoons of the reserved sauce and mix well.

Spoon the saucy jackfruit into leftover theplas, roti or tortillas and top up with salsa and sour cream before serving.
