Mogar ki Sabzi is a traditional Rajasthani dish that showcases the rich flavors of split moong dal. In a tadka pan, melt the ghee. Put in some cumin seeds and hing them until they start to sputter. Add ginger juliennes, garlic and let it cook for a few seconds. Add green chillies, dry red chillies, onion and let it cook until the onions are slightly browned.
Cook the tomato paste, spice powders, and salt until the sauce begins to leave ghee on the sides of the pan.
Cook the mogar/moong dal in water until it is mushy and the water has evaporated. (The dal should still have a little of bite to it, so don't overcook it.)

Mix in the lemon juice, kasuri methi, and coriander leaves. Stir in some ginger chilli powder tadka and serve immediately while still hot.
