Protein-Packed Vegetable Stuffed Omelette For Breakfast

Looking for a delicious and protein-packed breakfast to start your day? Try this easy vegetable stuffed omelette.

Ingredients

3 eggs, 2 tbsp oil, 2 spring onions (sliced), for stuffing: 2 tbsp oil, 10-12 garlic (chopped), 1inch ginger (chopped), ½ green capsicum (cut into thin strips), 1/2 yellow capsicum (cut into thin strips), 1/2 red capsicum (cut into thin strips), 3 tbsp sprouted green gram, salt to taste

Step 1

Heat oil in pan, add all the veggies and salt. Toss and cook for a minute. Set it aside. Break three eggs into a bowl and whisk with salt and a little water well.

Step 2

Heat a little oil in a pan. Pour some egg mixture and rotate the pan so that it spreads evenly all around. Cook till the underside is done.

Step 3

Remove the omelette onto a work top, place some of the stuffing on one side and roll. Cut each omelette into half and serve.
