Protein-Packed Mushroom And Egg Noodle Soup For Weight Loss

Ingredients

2 cups mushrooms, sliced 2 eggs, boiled and halved 1 litre water 1 tbsp ginger, sliced 1 tsp garlic, minced 1 cup onions, sliced 1 tbsp black pepper 1 tbsp soy sauce Salt, to taste 1 tbsp olive oil 1 cup buckwheat noodles Green onions, for garnish Red chillies, for garnish Coriander leaves, for garnish

Step 1

Heat oil in a large pot and add the ginger, garlic, onions and mushrooms. Let the mushrooms sweat for 10 minutes.

Step 2

Now add the salt, black pepper, soy sauce and mix well. Cook for another 10 minutes and then add the water.

Step 3

Mix well and continue to cook the liquid until you have a brownish broth.

Step 4

Add the buckwheat noodles to the broth and cook until the noodles are al dente. Transfer the broth into serving bowls.

Top the broth with green onions, red chillies, eggs and coriander leaves and enjoy the soupy goodness.
