Made using cooked legumes, avocado and fresh basil – the protein-loaded pasta is a great way to enhance texture as well as boost nutritional value into the herby condiment. Toss this pesto with some pasta or use as a spread on sandwiches, to elevate your working lunches.
1 cup black-eyed peas, cooked 5-6 cashews 3 cloves garlic ½ avocado 100 grams fresh basil 2-3 tablespoons olive oil Salt, to taste
Combine all the ingredients in a blender jar and grind until they break down.
Add a bit of water or a few ice cubes and blitz once more to make it smooth and creamy.
Transfer to an air-tight jar and use for up to 1 week on pasta, sandwiches, dips, etc.
