Maacher Tel refers to fish offal in Bengali and includes fish fat, intestine, liver, etc. This simple Bengali recipe turns these nutrient-dense ingredients into a simple dish that goes with rice.

150g fish offal 2 onions, chopped 1 eggplant, diced 1 potato, diced 1 tsp ginger-garlic paste 2 green chillies, chopped 2 tsp turmeric powder Salt, to taste 2 tbsp mustard oil
Wash the fish offal properly and marinate with turmeric powder and salt.

Heat mustard oil in a wok and fry the eggplants and potatoes separately. Set aside.

In the remaining oil, add the marinated fish offal and saute for a minute.

Once the entrails release their oil, add the onions and saute until the onions turn brown.

Add ginger-garlic paste, turmeric powder, green chillies and the potatoes. Mix well and cook for 5 minutes.

Once the potatoes are a bit tender, add the eggplants, adjust the salt, mix well and cook for 10 minutes.

Serve the Maacher Tel with hot rice and a sprinkling of ghee.
