Celebrate this Pride Month with a cake that has all colours of the rainbow. Don’t worry; making a rainbow cake isn’t as hard as it sounds. Here is an easy recipe that you can follow to make the centrepiece of your celebration.
Cake Layers: 3 cups all-purpose flour 3 cups sugar 2.5 teaspoons baking powder 1 teaspoon salt 1 cup butter, room temperature 1 cup egg whites, room temperature 1.5 cups buttermilk, room temperature 2 tablespoons oil 2 teaspoons vanilla extract Gel food colouring
Vanilla Buttercream: 1 cup butter 3 cups sugar ¼ teaspoon salt 2 teaspoons vanilla extract 3-4 tablespoons milk
Mix the flour, sugar, baking powder, and salt. Set aside.
Whisk eggs, butter, buttermilk, oil, and vanilla extract. Gently add the dry ingredients and make a smooth batter.
Divide the batter into five equal parts. Add a few drops of gel food colour to each portion.
Pour each coloured batter into separate baking pans and bake for about 20-25 minutes. Let them cool.
Whisk butter, powdered sugar, and salt. Stir in vanilla extract and milk to make the buttercream.
Stack each cake layer on top of each other with buttercream in the middle. Cover the entire cake with the frosting.
Refrigerate for at least half an hour. Decorate with rainbow sprinkles and serve.
