Warm, comforting, and easy to make, this Winter Special Sweet Corn Soup combines fresh sweet corn, scallions, and mild spices. With simple ingredients, this light soup is perfect for chilly days.
1 large sweet corn cob 1.5 cups water (for steaming) 3 tbsp water (for blending) 1.5 tbsp oil or butter 2 tbsp chopped spring onion whites 1 tsp finely chopped celery (optional) ½ tsp crushed black pepper Salt, as needed 1.5 cups vegetable stock or water 2 tsp cornstarch 2 tbsp water (for cornstarch paste)
Steam the corn cob by boiling 1.5 cups of water in a pan. Steam for 8-10 minutes.
Once cooled, remove the kernels from the cob. Set aside 2 tablespoons of kernels.
Blend the remaining kernels with 3 tablespoons of water until smooth. Set aside.
Heat oil in a pan, then sauté spring onion whites and celery for 2 minutes on low heat.
Add the corn paste, then pour in the vegetable stock or water. Boil the soup on medium heat.
Add reserved corn kernels, black pepper, and salt. Simmer for 2-3 minutes on low heat.
Mix cornstarch and water, then add to soup. Stir for 2-3 minutes until the soup thickens.
Pour soup into bowls. Garnish with spring onion greens, parsley, or chives, and enjoy warm.
