Crispy dosa is regarded as an easy-to-make, popular South Indian staple. This is a recipe that can be enjoyed at any time of the meal, especially at breakfast. It is made with urad dal and rice, making it crisp and stuffed with potato masala. Dosa is usually served with sambar and coconut chutney. Take a look at the recipe here:

Ingredients

3 cup sona masuri rice 1/2 tsp methi/fenugreek seeds Water for soaking 1 cup urad dal 2 tbsp chana dal 2 tbsp toor dal 1 cup poha

Step 1

In a large bowl, take sona masuri rice and methi and soak it for at least 4 hours.

Step 2

In another bowl, take urad dal, toor dal and chana dal and soak them for 2 hours.

Step 3

Drain off the water from the dal and transfer to the grinder. Add water as required and blend it to a smooth paste.

Step 4

Transfer the batter to a large bowl and keep it aside. In the same grinder, add soaked rice and 1 cup of rinsed poha. Blend it to a coarse paste.

Step 5

Transfer the rice paste to the dal batter and mix well. Allow it to ferment for 8 hours.

Step 6

Add salt to the batter, and the dosa batter is ready. Add a ladle full of batter on hot tawa.

Step 7

Spread as thin as possible, making a crispy dosa. Take 1 tsp of butter and spread uniformly.

Step 8

Place two spoons of prepared aloo masala in the centre. Roast until the dosa turns golden brown and crisp. Scrape the sides of the dosa and roll the dosa. Your crispy dosa is ready.
