One of the most popular Indian snacks is papri chaat. Not only is it a lip-smacking indulgence but also easy to prepare. You can make it in bulk without burning yourself out in the kitchen. Try this recipe.
For Pakora 1 cup gram flour Salt to taste A pinch of turmeric 1 pinch of red chilli powder Water and oil as needed For Papri 2 cup maida 1 tsp ajwain Salt to taste Oil and water as needed
For Green Chutney 1 cup coriander leaves 1 cup mint leaves Salt to taste 1-inch ginger 2 green chillies 1 tbsp oil For Assembling 1 cup curd Pakoras Papdi Green chutney Tamarind chutney 1 cup boiled moong 1-2 boiled chopped potatoes 1 chopped onion 1 cup sev
Prepare the batter for pakoras and deep-fry them. Keep them aside in water so that they remain soft.
Knead the dough for papdi, divide it into smaller portions, roll papdis, and deep-fry them.
Prepare coriander-mint chutney. Add a tablespoon of mango pickle masala to enhance the flavour.
Use your mother’s recipe to prepare tamarind chutney or purchase it from the market.
Before assembling, boil a cup of moong and potatoes. Keep vegetables chopped and everything ready.
On a large plate, add papadi, crumbled pakoras, moong, and chopped vegetables. Add a dollop of curd, green chutney, and tamarind chutney. Top it with sev and serve.
