This easy homemade carrot soup is creamy, thick, and packed with flavour. Ready in just 30 minutes, it’s the perfect recipe for a healthy, hearty meal that you can easily customise.
1 tbsp oil (sunflower/extra virgin olive oil) ½ cup chopped onions ½ tsp chopped garlic 400g carrots, diced 2 tbsp chopped celery ½ tsp cumin seeds ½ tsp salt 2.5 cups vegetable stock ¼-½ tsp black pepper 1-2 tsp parsley or cilantro ¼ tsp lemon juice (optional)
Heat oil in a pot over medium heat. Add onions and garlic.
Sauté until the onions soften. Add carrots, celery, cumin seeds, and salt. Stir well.
Pour in vegetable stock and simmer until the carrots are tender.
Blend the cooked mixture into a smooth puree.
Reheat the pureed soup, then season with black pepper and parsley. Serve hot.
