Prepare Quick And Healthy Homemade Beetroot Kanji: A Step-By-Step Guide

Beetroot Kanji is a traditional North Indian fermented drink, rich in probiotics and full of flavour. This colourful beverage is made with beetroots, mustard seeds, and spices, offering a healthy, tangy refreshment.

Ingredients

3-4 small beetroots 8 cups boiled water (approx. 2 litres) 2 tsp red chilli powder 2 tbsp yellow mustard seeds or 1 tbsp black mustard seeds 1 tbsp black salt or regular salt (adjust to taste)

Step 1

Peel and chop the beetroots into 1.5 to 2-inch sticks.

Step 2

Boil 8 cups of water and let it cool to room temperature.

Step 3

Place the beetroot sticks in a clean glass or ceramic jar.

Step 4

Add mustard seeds, salt, and red chilli powder to the jar.

Step 5

Mix the ingredients thoroughly with a clean, dry spoon.

Step 6

Cover the jar loosely with a lid or muslin cloth and place it in the sun for 2-5 days.

Step 7

Stir daily. Once the kanji tastes sour, refrigerate it.
