These homemade fish fingers are super crispy on the outside and juicy on the inside. They’re a breeze to make, and you can’t go wrong with this delicious and easy recipe.
600g white fish fillets, patted dry Oil spray (olive oil or any plain) 1 1/2 cups panko breadcrumbs 1/4 cup parmesan 2 tsp paprika (optional)
1/2 tsp salt and pepper, each 1 egg 1 tbsp mayonnaise 2 tbsp flour Tartare sauce or other seafood dipping sauce Lemon wedges
Preheat the oven to 180°C / 350°F.
Spread breadcrumbs on a tray, spray with oil, and bake for 4 minutes.
Increase oven temperature to 220°C / 425°F and spray the used tray with oil.
Mix the batter ingredients in a separate bowl.
Cut the fish into strips and coat them immediately in the batter.
Place fish in breadcrumbs, press to adhere, and transfer to the baking tray.
Spray fish with oil and bake for 13 minutes until crispy on the outside. Serve immediately with lemon wedges and your choice of sauce.
