Discover a refreshing and healthy lemon coriander soup perfect for a light meal or starter. Packed with veggies, vibrant lemon, and fresh coriander, this soup offers a delightful burst of flavour in every sip.
2 tsp oil 2 garlic cloves, finely chopped 1-inch ginger, finely chopped ½ onion, finely chopped 2 tbsp coriander stems, finely chopped ½ carrot, finely chopped 2 tbsp cabbage, shredded 2 tbsp beans, finely chopped 2 tbsp sweet corn 3 cups water ½ tsp salt ½ tsp pepper powder 1 tbsp corn flour ¼ cup water 3 tbsp coriander, finely chopped 2 tbsp lemon juice
Heat 2 tsp oil in a large kadai and sauté garlic and ginger. Add onion and coriander stems, and sauté for one minute.
Mix in carrot, cabbage, beans, and sweet corn, sauté for one minute.
Pour 3 cups of water, add salt and pepper, then boil for 5 minutes.
Prepare a slurry with corn flour and water, ensuring no lumps.
Add the slurry to the soup, mix well, and boil for 2 minutes.
Turn off the heat, stir in coriander and lemon juice, and serve hot.
