Enjoy the soft, fluffy goodness of homemade Khaman Dhokla, a savoury gram flour cake that’s lightly sweet and spiced. This quick and easy recipe is perfect for any occasion and pairs well with chutney.
1.5 cups gram flour (besan) 1 tbsp semolina (rava) – optional 1 tbsp sugar 1.5 tsp ginger paste 1.5 tsp green chilli paste 2-3 pinches turmeric powder 1-2 pinches asafoetida 1 tbsp oil 1.5-2 tsp eno or ½-¾ tsp baking soda 1 tsp salt 1.5 tbsp lemon juice 1 cup water
Grease a steamer pan with 2-3 tsp of oil. Mix gram flour, semolina, ginger, chilli, turmeric, asafoetida, sugar, salt, and oil.
Add eno or baking soda and stir briskly until the batter becomes bubbly.
Pour the batter into the greased pan and place it in a hot steamer.
Steam for 12-15 minutes until a toothpick inserted comes out clean.
Prepare tempering with mustard seeds, sesame seeds, and water, then pour over the dhokla.
