Beetroot halwa is a healthy Indian dessert made with jaggery and free from refined sugar. This vegan and gluten-free dish is light and sweet and can be prepared in just 25 minutes—perfect for a quick treat!
2 tbsp coconut oil or ghee 4-5 cashews 1 tbsp sliced almonds 4-5 pistachios 2 cups grated beetroot 2 cups milk ¼ cup jaggery powder ¼ tsp cardamom powder ⅛ tsp salt ¼ cup almond powder (optional)
Wash, peel, and grate the beetroot into medium-thick shreds. Heat ghee or coconut oil in a pan and lightly fry the cashews, almonds, and pistachios.
Add the grated beetroot to the pan and sauté for 4-5 minutes over medium heat.
Pour in the milk and bring it to a boil, then simmer for 10-12 minutes.
Stir frequently until the milk reduces by 75-80%, making sure not to burn the beetroot.
Mix jaggery powder, salt, and cardamom, and cook until the halwa thickens.
Garnish with fried nuts and serve hot or cold as desired.
