Gond Laddu, a traditional Indian sweet, combines the rich flavours of whole wheat, ghee, and nuts with the unique texture of edible gum. Perfect for monsoon, this delicacy is both warming and nutritious.
250 grams whole wheat flour (2 heaped cups) 100 grams gond (½ cup edible gum) 200 grams powdered sugar, or 1 cup grated jaggery 2 tbsp almonds 2 tbsp cashews 2 tbsp pistachios (optional) 2 tbsp raisins 1 tsp green cardamom powder (optional) ½ cup desi ghee + 4 tbsp at room temperature (175 grams)
Heat desi ghee in a heavy kadai on medium-low heat until melted and hot.
Fry almonds, cashews and pistachios until their colour changes, then remove and set them aside with the almonds.
Add gond to the same ghee and fry until it puffs up completely, then set aside.
Roast whole wheat flour in the remaining ghee until golden brown, stirring continuously.
Mix the roasted flour with fried nuts, gond, and powdered sugar, then shape into laddus while the mixture is still warm.
