Hari Mirch Ka Achar is a spicy and tangy condiment made from green chillies, oil, vinegar, and spices. It enhances the flavour of any meal, adding a zesty twist to everyday dishes like rice and roti.
10 medium-spiced green chillies 1 tsp cumin seeds 2 tsp mustard seeds 1 tsp coriander seeds ¼ tsp fenugreek seeds 1 tsp fennel seeds ½ tsp carom seeds 1 tsp turmeric powder Salt to taste 1 lemon ¼ cup mustard oil Pinch of asafoetida 2 tbsp vinegar
Remove the head of the green chillies and cut them into small pieces.
In a pan, dry roast cumin, mustard, coriander, fenugreek, fennel, and carom seeds on low heat for 1 minute.
Let the roasted spices cool, then blend them into a slightly coarse powder.
Add the spice powder to the cut chillies, turmeric, salt, and lemon juice. Mix well.
Heat mustard oil and add a pinch of asafoetida. Allow the oil to cool completely. Pour the cooled oil over the chilli mixture and stir to combine all the ingredients.
Add vinegar and mix well. The pickle is ready to eat in 2 hours or after sun-drying for 2 days.
